Slice ham in half and then into half-inch pieces. Add mixed vegetables to a heat-safe dish and microwave, covered, for 40 seconds. Heat 2 tsp oil in a frying pan over medium heat and add mixed vegetables in a donut shape. Layer ham inside the donut hole and add egg to the center. Cover with a lid and cook through. Season with salt and pepper.
